Food for Sports Fans

One thing that I never really appreciated until I left the US was game day food. Now, I never actually went to any game day party (except for the superbowl…funny because I don’t even watch football) but watching all the little sports food cooking videos on Facebook made me really miss good old ‘Merican food. Luckily this weeks menu will help me get my fix. Today we’re cooking Pigskin Potatoes and Super Sub Balls. Let’s get cooking!

This trip to the grocery store wasn’t anxiety inducing for once! I first stopped by Vivi market since they’re known for importing odd American products. I figured that would be the one place I’d be able to find Worcestershire sauce, but alas, they didn’t have it. I knew I wouldn’t be able to find in anywhere in Italy so I sadly scratched that off my shopping list.

Next I headed to Conad where I was able to find every other ingredient I needed. I never thought in a million years that that would happen. I didn’t feel rushed while loading all of my groceries into my bags either. This shopping trip = a total win.

I arrived home, and shortly after Stef and I got to work. As always, we started with chopping. Stef chopped up all the potatoes, threw some spices on them, then we let them roast in the oven. She chopped up so many that we had to cook them in two batches since we only have one baking sheet.

I took care of forming all the meatballs since meat freaks Stef out, but I didn’t mind. I felt as though I was a sculptor creating award winning beautiful meatballs. I’m not very artistic, but these turned out beautifully! If there was a beauty pageant for meatballs these would win. They were also beautiful on the inside because they were stuffed with provolone cheese — which I might add was the BEST provolone cheese I’ve had in my whole life. No exaggeration.

While I formed the balls, Stef made an herby marinara sauce for dunking. As the meatballs cooked, the smell wafting from the kitchen was nearly irresistible. We were so excited when it came time for the moment of truth.

We dunked the meatballs in the sauce then piled them into our subs. Our mouths were watering for this moment of truth. 3…2…1…. SCORE! I’m a newly found meatball lover and these may be the best I have ever tasted. I downed the sandwich so quickly. The potatoes were also a hole-in-one! Probably the best potato wedge recipe to date from Rachel Ray. I would’ve eaten more if I hadn’t stuffed my face with provolone while everything was cooking.

Now time for the ratings. The Pigskin Potatoes receive ♥♥♥♥♥ (5) hearts. I don’t think anyone can ever go wrong with potatoes, but Rachael Ray hit these out of the ball park with the spice mixture: salt, pepper, paprika, & garlic powder. I plan on making these often since they’re extremely easy and so delicious. The Super Sub Balls also receive ♥♥♥♥♥ (5) hearts. These balls were a knockout! I love meatballs, but I was a little skeptical about slam dunking them into the sauce — I’ve never been a sauce person — but the whole sandwich was a home run!

Sports food is great food, and this week’s menu made me want to host a watch party…I’m not very into sports though, so I’ll just make this for next year’s Miss USA watch party. Pageantry is the top tier sport, don’t even try to argue with me! Maybe I’ll make this at a watch party for my future husband and his friends…only time will tell.

TV Dinner

With finals quickly approaching, there is nothing more I want to do than sit in bed with a huge dinner of all my favorite foods while watching Gossip Girl on Netflix. Anything like that is way better than studying for finals. It’s my lucky night tonight, because although this menu isn’t my favorite food (sushi) I can still watch Netflix while eating it! On tap for tonight is Chicken Cacciatore Subs and Al Fredo’s Popcorn. Let’s get cooking!

This adventure started yesterday (Sunday) at the grocery store. Trader Joe’s was the last place I wanted to be at 8pm on Sunday. I had a long weekend celebrating Ashley’s 21st and all I wanted was to curl up in bed and sleep for at least 15 hours. But I still dragged my butt to the store. I was expecting the store to be overflowing with people, but I was pleasantly surprised to see that there was absolutely no line! This was one of the most bearable shopping trips of my life — until my Sherri Hill shopping bag broke. RIP to that bag, it had been with me since I moved to New York. I had to carry the bag like a baby the whole way home so it’s contents wouldn’t spill everywhere.

Fast forward to today (Monday). After my first round of classes I stopped by the Food Emporium to pick up my last two ingredients: rolls and diced tomatoes. I wasn’t cooking until my last class was over at 6:30, but I texted Martina to remind her to bring the wine…she said she couldn’t come anymore ): I thought I’d finally be cooking with friends after so long, but I guess not.

I was starving by the time class was over and ran home as quickly as I could to start cooking. I didn’t have much to chop tonight which was a relief and the chicken cooked pretty quickly. All was going well until one of the chicken breasts literally flew over my counter and onto the floor. I just about had a heart attack. Luckily the chicken didn’t get dirty (5-second rule) and I placed it back on the plate to be chopped.

While my veggies cooked I cut the chicken. I didn’t have time to go out and buy more red wine, but I’ve had some sitting in my kitchen since January (I know gross) but I didn’t have any other options so I used that and prayed my food would still turn out okay.

Once the sauce was complete and the chicken was submerged into it, I piled the concoction onto my rolls, topped it with some provolone, and put it under the broiler to melt.

I decided to clean up a bit while the cheese melted, but I took to long and burned it a bit, but no worries, it was still edible! So here comes the 1st moment of truth for the night. 3…2…1… Just what I needed! This sub was oh so delicious. The combination of my favorite veggies (mushrooms, bell peppers, & onions), and perfectly cooked chicken was stupendous! I made two since I was so hungry and I situated myself on the floor to watch Gossip Girl while I ate.

I was so full from my subs, so I waited until Ashley got home to make the popcorn. I realized last minute that we were out of Parmesan, so I ran over to Duane Reade in my apron to pick some up. The line at Duane Reade was worse than the line at Trader Joe’s, I was there for a while before I finally made it home.

When I finally got home I topped my popcorn with garlic butter & Parmesan, then Ash and I had another moment of truth in front of the TV. 3…2…1…meh. This popcorn was so buttery and cheesy. I’m not much of a cheesy popcorn person — I prefer for my popcorn to be cooked in coconut oil and lightly topped with salt.

Now time for the ratings. The Chicken Cacciatore Subs receive ♥♥♥♥♥ (5) hearts. My dad always says that the bread makes a sandwich and I couldn’t agree more. This bread held everything inside and never got soggy. The contents were also very flavorful and made for one of the best sandwiches I’ve had in a while. Bravo to these subs. Al Fredo’s Popcorn receives ♥♥ (2) hearts. It doesn’t take much to mess up popcorn, but Al Fredo must’ve been high when he made this recipe. Too much cheese, too buttery, too bleh. No thank you. I only ate it because it was in front of me but Ash and I threw half of it away.

All in all, you know it’s a good night when you can sit on the bed and watch TV while you eat..but let’s be real. When your apartment is the size of a shoe box, the only place there’s room to eat is the bed…so a tv dinner is my dinner every night. Although I try to make it seem like I eat fancily…or at least cook fancily…okay whatever, goodbye ya’ll!

Endless Summer

During the cold winter months, I miss one thing more than anything: SUMMER. I’m definitely more of a warm weather person and the blistering cold just drags me down most of the time. Not only do I miss the heat, but all of the amazing summer foods too. I’d do anything to be at a cookout with friends, soaking up the sun, and eating some good food. Luckily with tonight’s meal I’ll be transported to summertime (for at least a half hour). On tap for tonight is Oil-and-Vinegar Slaw, Devilish Chili-Cheese Dogs, and Summer-ish Succotash Salad. Let’s get cooking!

It’s the ultimate cheat-meal day of the year: Super Bowl Sunday. Ash and I decided to host all of our friends & have a watching party. In preparation for everyone to come over I headed to Trader Joe’s around 4pm.

I stepped out of the subway at 72nd street to my worst Trader Joe’s nightmare. the line to just get INTO the store was wrapped around the block. I debated dropping everything and going home, but I knew I had to stay. Thank Goodness the line moved quickly; I was inside within 12 minutes.

This Trader Joe’s trip was not the most pleasant to say the least. There were shopping cart traffic jams every step I took, and surprise surprise….I couldn’t find half of the ingredients I needed. I prayed Fairway wouldn’t be as crowded.

Fairway was crowded, but not as crowded as Trader Joe’s. I managed to find 99% of my ingredients there. What about the last 1%? Oh, don’t get me started. I needed hot dog buns, so I went over to the bread section. A lot of times I have issues finding things — even though they are right in front of my face. I asked an employee “hot dog buns…are they right in front of me?” as I said this, someone took the LAST bag of buns. I wanted to scream. The guy even laughed as he walked away. Talk about rude.

I left Fairway in a pretty bad mood because of the whole bun situation. Thankfully I have awesome friends that helped fix the situation. Ashley Gray stopped to get me my buns before she came over. She was my lifesaver!

I came home and slowly but surely, people started bailing. I feel like I should just expect to cook alone from now on, which sucks, but it’s life. At least cooking alone gives me time to think.

I immediately started chopping 2 onions, a red bell pepper, & garlic. Chopping and dicing everything is always the slow part of cooking, but once that was done it was time for the main attraction: cooking the meat.

I slapped down some ground beef into my pan & browned and crumbled it, then added some tasty extras: onion, garlic, chili powder and Worcestershire sauce. Lemme tell you, it smelled heavenly! I felt like I was at a good old barbecue.

I let the chili sit a bit & moved on to the dogs. Now, these dogs aren’t just regular chili cheese dogs — they’re devilish chili cheese dogs. To make them extra devilish, the dogs marinated in melted butter and hot sauce. It’s getting spicy in here!

Once the dogs were firey enough, they were assembled and put under the broiler to let the cheese melt. While the dogs were in the oven I quickly threw together the slaw and the salad.

Finally it was time for the moment of truth….I left the hot dogs in the oven a little too long so they were all burnt, but that didn’t stop me from digging in. 3..2..1…ahhhh sweet summer time….or sweet super bowl time? Whichever….either way this meal was delicious! This was the first time I had ever had chili cheese dogs….in fact it’s the first time I ever ate a hot dog with toppings! (I liked my food very plain growing up). They were not too spicy and I could’ve eaten 5 more of them at once — they were that good! The slaw was a nice refreshing side with a little hint of sweetness; quite the pleasant surprise. The salad was also good. I’m not a huge fan of random salads with beans but this was totally acceptable for me.

Now time for rating! The Oil-and-Vinegar slaw receives ♥♥♥♥♥ (5) hearts. This was a good surprise to me. I had never eaten any kind of slaw before, and this was a perfect touch next to the dogs. Crunchy, salty & sweet all mixed into one! It was great. Next the Devilish Chili-Cheese Dogs receive ♥♥♥♥♥ (5) hearts. This is what a hot dog should be like. The dogs had the right amount of spice, and when topped with the chili & melted cheese it became a beautifully crafted spicy & flavorful master piece. So delicious. Finally, the Summer-ish Succotash Salad receives ♥♥♥ (3) hearts. This dish was acceptable to me, but it was nothing special. Like I said, I’m just not a huge fan of bean salads. Altogether this was a great meal and perfect for the Super Bowl.

Summer or winter, this meal will make you feel like you truly are in an Endless Summer. Now I can’t wait for summer and all of the picnics/barbecues that will entail! Only 4 more months until the time comes…the wait will be hard, but these hot dogs will keep me satisfied for the time being.
